Apple Fennel Slaw

The dilemma is real.

Did you grow up eating apples, oranges and bananas all year round? Yeah, me too.

It struck me as crazy the first time I learned that apples aren’t available all year round from within the borders of my own country. It surprised me even more to know that during the summer months, our “fresh” apples were being flown in from New Zealand. I did learn that if it was labeled as home grown, but happened to be July, than the quality would surely be less than stellar. Apples stored for long periods of time to keep fresh apples on the market are kept in oxygen, temperature and humidity controlled environments and I find that the texture, taste and ultimately, nutritional value suffers.

Eating seasonal can be difficult, depending on where you reside. What you may be used to, having grown up in a very different mindset, is no longer “allowed” by your own exacting standards. Fruits are from far away lands, meats from distant countries, packaged foods from unrecognizable states…it sometimes can feel like too much effort. I assure you that once you put a little time into planning, it is not so difficult to buy close to home. You don’t need to punish yourself if you buy from somewhere else (vanilla beans** don’t exactly grow in the Northern hemisphere very well, though there are some places that do manage to cultivate it up North), or if you don’t manage to even buy mostly local most of the time.

Grainy Dijon Potato Salad

Things are starting to slow down a bit at Guilty Kitchen lately, and I feel like I should explain myself.

I have this baby in utero, and it’s like, huge okay? I can’t stand up in the kitchen (barefoot no less) for more than 20-30 minutes at a time before I start to feel like I’m carrying a small elephant on my front. That’s when I start to lean my big fat belly on the counter, and then well, that’s not so food safe is it? When the tunnel vision starts, that’s when I know it’s time to sit down.

I can’t see my toes anymore. It’s not like I really want to, but hey some people dig those things you know?

Steak and Pineapple Skewers

What is GOING ON???

I know you’re probably been wondering what in the $@&% has been going on around here haven’t you? Let me tell you, it’s not pretty.

Sometime at the end of April this site was hacked into and a malicious bit of code was installed on some of my files. At first it affected the RSS feed and the backend of the site where I do all the writing and editing. Then it started to affect the actual site and when it loaded, some users would get a malware warning that looked like their own Windows program, but was in fact not.

Seems the problems stem from my hosting site, GoDaddy (read more here.)

So now after many hours of figuring this all out and moving files and copying and backing up (all done by my wonderful, unpaid husband), we are moving on to better hosting providers.

There should be no downtime involved, so no worries about getting your next recipe fix! Hopefully all of this will be put to rest so I can think about other things, namely this writhing alien in my belly (4 weeks to go!).

Today’s recipe is what I call “thrown together”. It’s not that this meal won’t have you swooning over every bite, but it is something I put together because I happened to have most of the ingredients just laying around.

Prime Rib Roast with Fresh Horseradish


Meat. It’s not something I take lightly.

I’ve been a vegetarian and, although I don’t see myself ever going back down that road, I do appreciate the time I spent there. We have at least two to three meals a week that do not involve the flesh of animals and I am proud of that. Not only can I say I am reducing my carbon footprint, but I am saving myself money in the process.

Have you seen Food, Inc. yet? Me neither, but I am reading the book and I have to say, although I am aware of most of the things they talk about, some of the information is appalling. Taking meat out of your meals for just one day a week can reduce your family’s carbon emissions by a lot. According to the UN, over the course of a year you could save the planet from 52kg of excess carbon emissions.

Reducing meat in your daily diet is not as hard as some people think. It just takes a little forethought and planning. If you are used to basing each nightly meal around a major protein source, consider reducing the protein to a footnote of the recipe. Meat doesn’t have to be the star. Here are some fabulous examples to start you out: Spring Asparagus and Pancetta Fettucine and Wor Wonton Soup. Once you have gotten used to reduced protein in your meal, you can make the move over to completely meatless meals, like these Vegetarian Meals.
