Breakfast for dinner is probably one of my most favourite ways to make dinner in a hurry. What’s faster than frying some eggs, bacon or sausages and whipping up some delicious waffles in less than ten minutes? I kid you not, these Savoury Waffles take even the most amateur of cooks less than twenty minutes to make, and that’s if you are having a tough time concentrating on the task at hand.

Plus who doesn’t love yolk porn, aka egg gravy? Sure, slather some butter on that mother when it comes hot off the grill, but the egg gravy is where it’s truly at. If you have made a dish that is yearning for some moisture and you have no drippings to whip into a silky, delicious gravy…put an egg on it. It’s the simplest answer to life’s yearning questions really.

You can also get a hunk like this one to fry up your eggs for you on a conveniently electric griddle. One of you can work in the kitchen, the other off to the side. That way you can flex at each other and make kissy faces to your kids’ disgust. Whenever we’re making eggs for dinner, Adrian (hunk), takes on the task of the egg porn, while I toil away with the waffle iron. Savoury Waffles

Yield: 4 waffles

Ingredients

  • 2/3 cup all purpose flour
  • 1/3 cup blue or yellow medium ground cornmeal
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 large egg
  • 3/4 cup kéfir (buttermilk works too)
  • 1 tbsp melted butter
  • oil for greasing your waffle iron

Instructions

  1. Preheat your waffle iron.
  2. In a small bowl, blend together the dry ingredients.
  3. In a separate bowl whisk the egg, then add the kéfir or buttermilk and the melted butter and whisk again until thoroughly blended.
  4. Pour the dry ingredients into the wet and stir to combine. Spray your waffle iron with oil and spoon out the batter evenly. Follow your waffle iron manufacturers instructions for cooking.
  5. Serve with fried eggs, bacon, sausage, sour cream, chives or whatever the hell you want!
