Coconut Macaroons

Life is so super, ridiculously filled with things to do right now. It’s not even funny.

 

Here’s what’s going on daily in my house:

Painting all the rooms with my mama (thanks ma!)
Setting up the gym in the garage
Picking up dog poop
Yelling at the dogs to stop barking
Yelling at the kids to stop fighting
Reading books to the kids
Making coffee
Checking email
Answering emails
Taking our landlord to Arbitration because he won’t return our damage deposit
Wishing I had another coffee
Yelling at the kids to stop fighting
Doing the dishes
Weeding the garden
Unloading the dishwasher
Taking Thing #1 to preschool
Signing Thing #1 up for kindergarten
Doing my “job” as a food photographer for a local foodie mag
Editing photos
Wishing I had more coffee
Making sixteen recipes at a time for the cookbook to make my deadline
Photographing all sixteen recipes
Eating all sixteen recipes
Backsquatting my bodyweight
Doing pullups on my newly built garage rig (thanks Dad!)
Collapsing on the couch
Watching new episodes of Arrested Development
Stuffing my face full of snacks after dinner (lift big eat big yo!)
Passing out on the couch at 9:30

Mostly I have no time to think straight let alone get something done outside of things that need immediate attention. I could use a manicure, pedicure, hot stone massage, relaxing dip in a mineral pool and an afternoon of champagne and housecoats in a hotel far away. Somewhere palm trees sway…

On a happy note, I love our new house, I’m stoked to see my first kid go to school, our gym is becoming amazing, I have a cookbook coming out next January and I am PRing just about every lift, plus my ass looks awesome in jeans. Thank you squatting!

Also, the CrossFit Regionals are ON right now and June 7-9 I am volunteering at the Canada West Regionals in Vancouver. I hope to see some of you there! I’ll be the little red head down in the scoring section right up front. Boom.

Also, coconut macaroons.

Yeah, you know they are easy to make and maybe you never liked them as a kid. But I promise you will like these ones. They are amazing by themselves, but even better drizzled in dark chocolate and served with a big old scoop of coconut cream. You’re welcome.

Coconut Macaroons

Cook Time: 12 minutes

Total Time: 27 minutes

Yield: 12-15 Macaroons

Delicious little handheld snacks with no gluten, soy, nuts, dairy or refined sugar. Coconut macaroons are simple to make and perfect for parties.

Ingredients

  • 4 egg whites
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla extract
  • 1/3 cup honey
  • 1/4 tsp sea salt
  • 3 cups unsweetened shredded coconut
  • 2 tbsp coconut flour

Instructions

  1. Preheat oven to 350°F. Line a baking tray with a silicone mat or parchment paper.
  2. In a metal bowl, whip the cream of tartar with the egg whites on high speed until stiff peaks form (when you pull the whisk out, the peak from the egg whites will stand up and curl over slightly at the top, like on the top of a soft serve ice cream cone).
  3. In a separate bowl, stir together the vanilla, honey and sea salt. Pour in the shredded coconut and coconut flour and mix with a fork.
  4. Fold the coconut mixture into the egg whites and mix until combined.
  5. Form balls about the size of a golf ball either with your hands or with an ice cream scoop, but make sure they are packed tight. When they bake they will not crumble unless they are not packed tightly enough.
  6. Bake on the parchment paper or silicone lined tray for 10-12 minutes (or until the bottoms of the macaroons are a golden brown).
  7. Remove from oven and set aside to cool.

Notes

Store in an airtight container at room temperature for 2-3 days.
