Vanilla Protein Pancakes

Servings: 10 -15 pancakes

Ingredients
  

  • 2 large eggs
  • 1/4 cup liquid egg whites
  • 3 tbsp almond milk
  • 7 tbsp white rice flour 1/2 cup - 1 tbsp
  • 7 tbsp vanilla whey protein powder 1/2 cup - 1 tbsp
  • 1 tsp baking powder
  • pinch of sea salt
  • pinch of vanilla bean powder or 1 tsp vanilla extract
  • Optional: butter for frying

Method
 

  1. Preheat a nonstick griddle or large pan on medium low heat.
  2. Process all on high speed in blender until completely smooth.
  3. Melt butter in pan or on griddle if using and pour batter in desired shapes and sizes. Cook 45 seconds or until bubbles just begin to form, then flip over and cook 30-45 seconds more.
  4. Serve with desired toppings or use as bread for making PB and J sandwiches (as above) for your kids lunch!

Notes

These freeze well too. Just freeze flat on cookie sheets for easy thawing. Pop into toaster and voila!
