Chocolate Coconut Protein Cookie Balls (Paleo + Gluten Free)

Ingredients
  

  • ½ cup coconut flour
  • 2 scoop 60 grams chocolate protein powder **
  • 2 tsp baking powder
  • 4 packets stevia extract I used Wholesome Sweeteners **
  • 2 tbsp shredded coconut toast for 8 minutes at 350°F or toasted coconut flakes
  • ¼ tsp sea salt
  • ½ tsp cinnamon
  • 2 egg white
  • 1 Tbsp vanilla extract
  • ¼ cup walnut butter*
  • ¼ cup unsweetened almond milk
  • ¼ cup mini dark chocolate chips
  • ¼ cup cacao nibs
  • *To make your own which is cheaper and easier then buying it, just pulse about 1/3 cup of walnut halves in a food processor until liquified, about five minutes.

Method
 

  1. Preheat oven to 350°F. Mix dry ingredients. Blend in wet. Mix together with a wooden spoon.
  2. Roll into one inch round balls (about 20) and place on a baking sheet lined with parchment paper or a silicone mat.
  3. Bake for 7-9 minutes or until golden brown on the bottoms.
  4. Cool on sheet for 5 minutes, then transfer to a wire cooling rack and cool completely.

Notes

Feel free to add all chocolate chips, or all cacao nibs or whatever kind of chip you like but it will alter the nutritional info slightly.
