Method
- In a small bowl, whisk dry ingredients together.
- In a separate bowl, beat the eggs very well. Stir in the apple, vanilla and apple cider vinegar.
- Heat a lightly oiled (coconut oil), heavy sauté pan or a large non-stick pan on medium heat. Spoon into pan in desired sizes (I made 6 medium sized pancakes with this recipe) and cook until small bubbles form on the top (about 3-4 minutes depending on size). Flip and cook an additional 2-3 minutes.
- Serve plain, with fruit sauce or a good dollop of pure maple syrup.
Notes
These freeze and refrigerate quite well. Cool on wire racks and then transfer to an airtight container. Place in fridge or freezer. To reheat, simply warm up in pan on medium heat (once defrosted) or pop in the toaster.
