Breakfast for dinner might just be my favourite culinary loophole. There’s nothing faster, nothing more comforting, than throwing a few sausages or strips of bacon into a pan, frying up some eggs, and whisking together waffle batter in the time it takes to set the table. These savoury waffles? They’re weeknight gold. Even if you’re distracted (homework help, hungry kids circling like sharks), they’re done in twenty minutes flat.

And let’s talk about egg yolks for a second. There is nothing—nothing—like that golden yolk spilling across your plate, turning into instant egg gravy. Butter your waffle if you must, but the real magic happens when you crown it with an egg and watch that yolk do its thing. If dinner ever feels dry or uninspired: put an egg on it. Problem solved.

Savoury Waffles

Ingredients
  

  • 2/3 cup all purpose flour
  • 1/3 cup blue or yellow medium ground cornmeal
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 large egg
  • 3/4 cup kéfir buttermilk works too
  • 1 tbsp melted butter
  • oil for greasing your waffle iron

Method
 

  1. Preheat your waffle iron.
  2. In a small bowl, blend together the dry ingredients.
  3. In a separate bowl whisk the egg, then add the kéfir or buttermilk and the melted butter and whisk again until thoroughly blended.
  4. Pour the dry ingredients into the wet and stir to combine. Spray your waffle iron with oil and spoon out the batter evenly. Follow your waffle iron manufacturers instructions for cooking.
  5. Serve with fried eggs, bacon, sausage, sour cream, chives or whatever the hell you want!
