Simplicity.
Something we all strive for in life, but how does one achieve it?
One can downsize, simplify… all well and good, but what does that really do? Won’t you just get right back in to accumulating and complicating things?
I want life to be like it used to be, before everything got all complicated and adult.
Remember when you looked like this:
And the only thing that matter was how the game worked, or when the next fun meal was coming, or if you had to go to the bathroom or not. When things like horses and carriages going by on a blustery winter day evoked such magic in your eye that it could be seen by any near passer-by.
Remember when the swing set and getting a under duck was the coolest thing that happened to you all day and that your dad was the one to do it, well that was just the bees knees.
Why does life get so complicated the older you get? As if the size of your being was purely tied up in all the world’s problems. Well, for today I am living in my child’s eyes and loving every simple minute of it.

Simplicity also works as well for food as it does for the sanity of your life. Simple, forgiving food that comforts any day of the year. For simple dishes like that I go for pure comfort food, potatoes. Their ability to be used in an infinite array of styles, dishes and flavours makes them the perfect choice.
One Year Ago: Warm Spinach Artichoke Dip
Simple Roasted Potatoes
Yield: 4 servings
Prep Time: 5 minutes
Cooking Time: 60 minutes1 lb new potatoes (I use Yukon Gold)
5-10 garlic cloves, peeled and slightly squashed
2 tbsp grapeseed oil
3 small sprigs of rosemary
salt and pepper to taste1. Preheat oven to 400°F.
2. Toss all ingredients in a bowl and pour into baking dish.
3. Roast in oven for 45-60 minutes or until golden brown and tender when pierced with a fork.
4. Serve as an accompaniment to your favourite roasted meats.

I still try to live a simple life! At least when I’m home. Work can get in the way, but I promised myself I’d never grow up, and never try to over complicate things. ESPECIALLY food. I’m all about improvising and using what I have, instead of fretting about what I don’t have or have forgotten.
Those potatoes look delicious, and simple IS better sometimes.

Exactly. I love my tasty complicated food, but simple just does so many good things for my life. ahhhh….

Keeping it simple is probably the most difficult thing to do these days. It almost seems like the things that are supposed to make our lives easier make it harder… or more complicated!!!

I do wish I could go back to being a kid and live simply and freely like they do. I’d like to do so with the knowledge that I have now though, b/c we don’t appreciate what we have when we are young, we are too busy wanting to grow up!

Yup. Well said. And those potatoes look awesome! I’m not a huge fan of rosemary unless it’s on potatoes so this dish looks perfect.

I roast little fingerling potatoes all the time. I get the pan really hot, I drizzle olive oil over them, sprinkle with seasonings and then roast. They come out brown and yummy. One of my favorite things – especially the blue peruvian potatoes. So simple to do and so delicious.

Roasted potatoes can make any meal complete. Yours turned out great. I also sprinkle some paprika…it adds a subtle flavor.
YUMMMMM!!! i would throw in some thyme as well 🙂 only because i cook practically everything with thyme!
At least once a day I try to step back, turn off my computer, and just enjoy the simple things in life. Even just lounging on the couch, curled up with my dog and husband…sitting in silence can be a healthy thing from time to time. Gives us time to reflect, to take a breather… to disconnect from the complexities of the world.
