This is recipe #4 in the Thai Kitchen Canada #TKLucky7 Lucky Recipe Challenge. Recipe 1, recipe 2 and recipe 3 have all been posted. Be sure to stay tuned for the next three recipes and then the Regional and National voting portions, where you could be eligible to win some of the over $5,000 in prizes!
These Mango Shrimp Spicy Lettuce Rice Cups were an absolutely perfect little lunchtime meal. Easy to put together, filling and delicious. They take no time at all to make, and even less if you make the rice in advance. Pairing fresh shrimp with juicy mango brings out the sweetness in both and adding a crunchy lettuce leaf gives it a wonderful texture. The rice not only adds substance but an interesting mouthfeel along with the sweet mango and plump shrimp.
These could easily be served as appetizers, snacks or a light lunch. The Thai Kitchen Spicy Thai Mango Sauce is sweet, sticky and just the right amount of spicy. I love this sauce so much, I think it would be equally at home used as a glaze on grilled fruit as it would be as a finishing sauce on many fish or chicken recipes.
