Guess what today is?
27 years ago today, my poor mother laboured for many hours in a hospital bed. Then I came into the world, all 5 lbs. 10oz of me. My older sister’s dreams of being an only child were shattered in those moments and life has never been the same.
That’s right, today is my birthday.
I look forward to painting my toenails a glorious shade of fuchsia, travelling into the “big city” with my growing family, eating the most delicious tuna tacones the world has ever known and then finishing it off with a double scoop ice cream cone. Chocolate dipped waffle cone please.
What could be a better way to say, “Happy Birthday” to me? I can’t wait to see our little guy’s face covered in his first ice cream cone experience, and I can’t wait to spend an evening by the ocean side, enjoying every minute this life has to offer.
I’m not getting older, only more beautiful and wise.
But what is a birthday without a gift? Well, I love to give, so here is my gift to you.
This avocado cilantro dressing is an amalgamation of some of my most favourite of flavours. It is thick, decadent and complex. It also works fabulous as a dip. So think of me today my friends, I’ll be thinking of you as I down my double scoop of peanut butter fudge…
Avocado & Cilantro Dressing
1 large ripe avocado
3/4 bunch cilantro (about 1 cup loosely packed)
juice of 1 lime
juice of 1 lemon
1/4 cup extra virgin olive oil
1 clove garlic, grated or minced
1-2 Tbsp red wine vinegar
up to a 1/4 cup white balsamic vinegar
1. Scoop out flesh of avocado and place in blender or food processor.
2. Add cilantro, citrus juices, garlic, 1 Tbsp of red wine vinegar and olive oil.
3. Blend on low, adding remaining red wine vinegar and white balsamic vinegar to taste as you go, until emulsified. You may want to add more olive oil and vinegar/citrus juices to thin out. This dressing is quite thick, but if you add too much liquid, it does take away from the delicate flavour of the avocado.
** Just a note that this dressing is FANTASTIC on pasta salad too.
It’s also quite a few members of my family’s birthday in March as well. So happy birthday to Mom, Judy, Roni and Jasmine too! I’m thinking of you all!

I’ve never heard of or used white balsamic vinegar. can dark be used? or is there a flavor difference?

You can used dark in this recipe, but I would not interchange them in every recipe. White balsamic vinegar is a lot sweeter and much more mild in flavour. You might want to try a different vinegar, like champagne vinegar or another sweeter more mild vinegar. White balsamic vinegar is available in most grocery stores, right next to the regular stuff.
This is a wonderful combo! We love avocados…will have to try it!

I wouldn’t use the dark balsamic in the bean and avocado salad! I hope it’s not too late…the mild flavour of the white balsamic is what makes it work here…

Sounds like a guacamole/salad dressing hybrid. I’m definitely making this the next time I make taco salad.

I just made this. Its actually UNBELIEVABLE!!!! Soooo soooo sooooooo good. I can’t believe how amazing this taste. I’m looking forward to using the recipe again. I’m so happy I found white vinegar. White balsamic is very easy to find, but most people don’t know about it, and so assume it is rare and exotic. It should be at ANY local grocers, right next to the dark balsamic.

Wow that looks amazing.. I really want to try this! How long can you keep it in the oil type drizzlier? Will it turn brown? Thanks.. when I go to the grocery store Im going to get everything I need to make it!
Hi Jessica!, thanks for visiting! I actually kept mine in the fridge for a week, and it was still green. The flavour does start to lose some it’s attractiveness though after about 2-3 days.

This looks absolutely delicious! I’m wondering if I could substitute something else for the vinegar & the lime and lemon juices – I have a medical condition and those are foods I’m supposed to avoid. Do you have any suggestions on how I could modify your recipe?
I’m sorry laura, I don’t really know what to suggest to make dressing without vinegar or citrus juices. You could try wine, but I would think that is out of the question as well…?

About two to three days.
How long will this last in the fridge and does it change colors as in darken like guacamole does?
Yes, but it takes MUCH MUCH longer, like 24 hours.
Oh and it lasts about 3-4 days.
