There’s something about cooler weather that makes me want to get outside and soak up those last few warm afternoons. I want to drink my wine on the deck in the sunlight and stare out into the woods near our house, without wearing a toque (that’s a woolen hat yo), mittens, scarf and winter boots. I know I’ll be spending more and more time in the kitchen as the seasons change. Cold weather outside means more elaborate meals and time spent by the woodstove, stoking the fire. So what does this all mean? It means I want to relish the outside air while it’s still warm enough to enjoy without 14 layers of clothes on. It means I want to be outside in daylight, while it’s still around and not be inside during those last few nights of afternoon sun. It means it’s time to break out the slow cooker and some simple weeknight meals.
I’m a big fan of slow cookers. Though, I’ve only ventured into making protein based meals in there. You won’t find me making cake or brownies in my slow cooker. This baby is for meat and meat alone. Don’t get me wrong, I’m sure there are some fantastic recipes out there (feel free to e-mail them to me at elizabeth (at) guiltykitchen (dot) com if you’d like me to try one!), I just don’t mind cooking other food the old fashioned way. Slow cookers to me, are a just a great way to make meat tender and fall off the bone.
There are a lot of different cuts of meat that work well in a slow cooker, but the best one, in my humble opinion, is a pork roast. Not a loin though (too lean), but a good old fashioned blade roast or butt. These cuts have good fat to meat ratio and also contain both dark and lighter meat, they also come in boneless or bone-in. For this recipe, we’ll be using a boneless shoulder roast, about 4 lbs.

Pulled Pork Wraps with Country Coleslaw
1 Pork roast (approximately 4 lbs.)
1 bottle of BBQ sauce (Flavour is a personal decision, or use homemade!)
1 package of 8″ wraps (or again, make your own!) You could also use buns instead.1. In a slow cooker, place your roast and smother in BBQ sauce. Cook on high for 1 hour, then turn down to low for another 8 hours (add more sauce in the last 2 hours).
2. When cooking time is done, remove roast from pan and place in bowl. Take 2 forks and begin to pull the meat using a scissoring action. Confused? Take your two forks in both hands, stab the meat with both at opposite ends of the roast (your wrist should be crossed) and pull across (now your wrists should be uncrossed).
3. Add more sauce if desired at this point.
4. Serve pulled pork in wraps or buns with coleslaw.Country Coleslaw
1/2 head of green cabbage, shredded
2 large carrots, peeled and shredded
3/4 cup mayonnaise
3 Tbsp. sugar
1 1/2 Tbsp. White wine vinegar
1/2 tsp. Dijon mustard
1/4 tsp. onion powder
1/4 tsp. dry mustard
Fresh ground black pepper
1 Tbsp lime juice
1/2 cup buttermilk
1/4 tsp salt1. Combine cabbage and carrots in a large bowl.
2. Combine remaining ingredients in another bowl. Stirring until sugar is dissolved. Combine with cabbage and let stand for 30 minutes prior to devouring.
3. Serve as topping for pulled pork sandwiches, or as a side dish for another meal.
oh this was GREAT! I loved this meal.. loved the leftovers too! Finally left overs! Even though I am not going to win the coffee or chocolate (which I helped picked out) I will leave you with this.
What do I love about the cooler weather? Cuddling up with Mrs. Guilty.
Even though I don’t think I qualify for the contest either, i’d have to say I love cuddling up on the sofa with my husband all wrapped up in blankets and watching a good movie when it gets colder, and I just hate that in BC too many people just don’t know how to drive when the snow hits!
In cooler weather, I love warming up with some hot cocoa and marshmallows. =)

Nice post, I think pulled pork and coleslaw go together very well indeed.
What I like about the cooler weather? Lots. Being able to sleep in big pajamas and a cool bedroom. Wanting to make soups and stews. Fun fall sweaters, curling up with a book and watching it rain… I love the Fall.

Great post! I love the cold weather becasue I can have a fire and a nice warm drink, but what i do not know if I like or not is whether I will like the snow in Michigan this year. We’ll see!

I actually like fall. I like the beautiful colors and cooler weather, but I really hate winter. Here in MI, it’s so cold. I also really hate how dark it gets so early. It’s depressing.
Our Christmas tradition is pulled pork sandwiches with cole slaw. I am actually going to make it sometime this week! I make it overnight and then people can eat whenever they want. We usually have people coming over all day, so it’s nice to always have food ready. I do love Christmas, of course!

I love that in Tucson I can wear my flip flops every day of the week during winter.

Yum, I’ve used my slow cooker for pork butt lots of times. The one non-meat thing I make in the slow cooker? Beans. Yep – while I’m at work, that baby will bring those beans to tender yumminess. What do I love about fall? I love the cooler weather. I love the crispness of the air. We don’t really get “multiple layers of clothing” cold much here (Dallas) so I’m even good with the winter. I am going to miss the fresh produce, though, come January. I’ll be complaining for sure. 🙂

I love how beautiful the leaves look when they change colours and I also love having to cover up with a blanket to read at night because it’s getting chilly! I love fall!

Oh, for the love of fall!! I’m the girl who grits her teeth when it starts to warm up and is forced to pull out summer clothes – ick!! Hot, sweaty, gross, I’ve always been a Fall and Winter gal – maybe it’s the TORONTO-ian in me! My favorite thing of autumn are my cozy sweaters and BIG mugs of caramel apple cider!

I love East Coast fall but I hate Vancouver fall, where I’ve lived for the past 6 years, because it means… rain and NO SUN is on its way for 4 months or more 🙁 I also hate saying good bye to summer fruit and Birks – I hate boots!

I prefer cooler weather. It’s more pleasant for basically any outdoor activity that I like. Hiking, horseback riding, and rock climbing are all better when its the activity and not the temperature that makes me sweat.

I love “sweater weather,” but dread the onset of winter. There are already reports that it will snow in southern Wisconsin this weekend. The northern part of the state has already seen some snow on the ground.

I tried the coleslaw with dinner tonight and it was great! Enjoyed the creamy dressing with a hint of tang. Served it with sauteed halibut and oven fries. Definitely will be making it often in the future.
I stumbled across your blog looking for something to pair with pulled pork in wraps that isn’t coleslaw. Apparently my family isn’t big on coleslaw…weirdos. But then I noticed that you’re from the island too! Small world. I was raised in the Cowichan Valley, left for the lower mainland and Kelowna for school and then early marriage, and I’m back in Langford (Victoria) now that the husband is in the navy, and I’m SO happy to be back on the island and in close proximity to my family! I haven’t checked out your blog much yet, but I subscribed anyway just because well, small world!
