Paleo Chocolate Coconut and Lime Pie

It’s over.

The holiday season is gone.

The decorations are put away, the bags of ripped paper are in the recycling, the stuffed bellies are recovering and the year has started anew.

It’s time to make resolutions, amends, promises…blah, blah, blah….

I don’t usually fall into the camp of resolution makers. I try to fix any bad habits when the calendar rolls over and I definitely make goals, but I have no written lists are hard and fast rules. I try to keep myself on my toes, ever changing, always trying to better whatever bumps cross my path.

The past year threw some huge bumps my way and things could have been changed in a drastic way and not for the better. But I persevered, and so did my friends and family too. Relationships were forged even stronger and great friendships were made. The past year brought me a stronger marriage, great friends, a new found love of CrossFit, a better diet and a stronger, healthier, more confident me.

I couldn’t ask for anything more. I can only strive to make 2013 even better then 2012 and I know it will tough and not always rainbows and unicorns, but I’ll get there.

There will also be more tattoos, some kind of crazy ass haircut, maybe a new piercing and of course more food, workouts and sore muscles.

 Here’s my question going into 2013: Do you do your workouts at home or at a gym?

We do ours at home, or our neighbours garage gym. But this last weekend we made our own home gym ninety four times cooler by adding this bad boy:

Squat Stands

DIY squat stands! Oh and that’s my Christmas present it’s holding up, my own Olympic Barbell (not the tampon bar, a real MAN’S bar).

Oh and here’s how we rung in the new year with our awesome neighbours. This pie might scare you. It’s green.

Fear not friends! The green is from a natural source, the avocado. Oh, that scares you too? I thought the same but my first taste out of the blender and I was hooked. Sweet avocado? Yes, please! Make this pie when you are having a party and you will have a conversation piece built right in. Will they try? Will they like it? Even our kids devoured this one.

PS. I start my sugar detox today.

Recipe inspired “Key Lime and Avocado Pie” by Chef Alyssa Moreau

Paleo Chocolate Coconut and Lime Pie

Prep Time 30 minutes
Total Time 30 minutes

Ingredients
  

Crust
  • 1 ½ cups unsweetened coconut chips
  • ½ cup blanched almond meal
  • juice and zest of one lime
  • ¼ tsp sea salt
  • 1 cup medjool dates pitted
  • 2 tsp vanilla extract
  • ¼ cup ghee or coconut oil melted
Chocolate Layer
  • 3 oz unsweetened chocolate
  • 2 Tbsp coconut oil
For the Filling
  • 3 large ripe avocados about 2 cups
  • juice and zest from two limes
  • cup maple syrup or honey
  • ¼ cup coconut oil melted
  • ¼ tsp sea salt
  • 1 tsp vanilla extract

Method
 

For the Crust
  1. In a food processor or heavy duty blender, blend all crust ingredients until well blended but a little chunky.
  2. Pat in to a greased 9" glass pie plate.
  3. Chill in freezer while moving to the next step.
For the Chocolate Layer
  1. Over a double boiler or a metal bowl resting over a pot of simmering water, melt the chocolate and coconut oil together. (You can add a tablespoon of maple syrup here if you think you might not like the deep rich chocolate flavour.
  2. Pour the chocolate over the cooled crust and swirl it around to cover all the surface area.
  3. Put it back in the freezer to cool completely.
For the Filling
  1. In a blender, blend all filling ingredients until smooth.
  2. Pour over solidified chocolate layer and chill for four to six hours.
  3. Serve with whipped cream if you're a rebel like me.

Notes

If there are leftovers, the top layer of avocado might discolour a small amount to a browner shade of green, but not to worry...it's still fantastic tasting. Make sure to cover tightly and consume within 48-72 hours.

  1. Oh, girl you’ve got my full attention. I’m currently suffering from wheat-sugar belly and this will surely help the detox process! I had to laugh at your tampon bar comment! Love the idea of doing crossfit in our garage. Then I can decide to NOT run 10 200m stretches in 12 degree F weather like I did this morning. Ugh. Looking forward to the squat bar tute! Thx! xoxo

  2. God that looks fantastic! The avocado filling has really planted seed in my brain and it must be done! Thanks for pushing me outside my comfort zone by making this looks so damn good!

    I prefer to run outdoors (although the dark mornings have got me in a gym, on a treadmill, which I HATE!) and running has become a big part of my workout routine, harkening back to my days of track and field glory! However, I prefer doing tabata/HIIT workouts in the privacy of my living room or dark corner of the gym – no one needs to see me grunting through burpees!

  3. Now that is one gorgeous pie! It sounds as though you pushed through some hurdles this year and came out even stronger, both physically and mentally. I hope 2013 is a fantastic year for you.

    As for working out, I run outside and do a strength training class at the gym.

  5. Mmmm this looks good, but then I love anything coconut or lime so that’s a given 😉 What exactly are coconut chips? Supermarkets here are way behind Canada when it comes to stock more health oriented ingredients and specialty stores are require advance planning as they are not in the regular work-home loop.

    As for exercise, I hate treadmills and prefer to run outside and do any kind of tabata/HIIT workouts at home, but I do really miss the energy of group yoga classes and runs that I was part of in Victoria. We’re working (slowly) on a home gym here as our place has a large garage and covered carport but after the big move and the house we can only afford step by step so any DIY tips are appreciated 🙂

      I will be posting the DIY post this week or next hopefully. As for the coconut chips, you could sub dessicated unsweetened coconut if you need to. Coconut ships are sometimes called coconut ribbons as well.

  6. I’m DYING over that pie. I’ve adopted the paleo diet in recent months due to certain stomach issues and I’m always looking for some clean (er…at least cleanER) dessert items. I can’t wait to give it a go!

  8. Sweet avocado is the bees knees! And the pie is a beautiful way to present it – our usual is in a smoothie.

    I split my workout up – cardio or BodyRock at home before work, weight lifting during lunch break every day. Works a treat. Do you work out morning or evening? How do you fit it around work? And where do you lock your kids up while you are at the neighbours?

    1. We workout in the afternoon before dinner (about 4pm) I don’t have a regular job (I’m a freelancer) and when we are at the neighbours, the kids stay in the house with their kids (6 and 9) and play while we are in the garage…:)

  9. Oh and that’s weightlifting at the community gym. Often times I am the only one there, so apart from the 15 minute snow-bike-ride in -30˚C from work, its as good as doing it at home!

    1. No sugar! Ha….just kidding. No honey or added sugars (maple syrup, etc.) and low consumption of high GI fruits. So I am trying to not eat too many high sugar fruits (dates, bananas, etc.)
