Vanilla Protein Pancakes

So remember that awesome KitchenAid dishwasher I got? Here let me refresh your memory…

Ooooooo shiny! But in all seriousness, let’s talk about this thing shall we? The reason I got handed a dishwasher worth almost 2K is so that I can tell you all my honest to goodness opinion of it. Every time I tell people that KitchenAid gave me a dishwasher, I get quizzical looks and the inevitable question: “WHY?!”. Because, I’m awesome?

But no really, it’s because I have a keen eye and an honest voice. I don’t pretend to like things that I don’t like and I tell it like it is. So I’ve told you all about how much I love it, but what is wrong with it right?! SOmething is always wrong with the things we spend money on. I will tell you this thing is as quiet as they advertise (we have a decibel reader…NERDS!) and washes and dries like no other dishwasher I’ve owned, as long as you put the dishes where you are supposed to…like maybe, not on top of one another.

But (there’s always a but), there is one thing I hate about this dishwasher. Literally, anyone who has ever owned a stainless steel appliance will have the same qualms as me on this one. The stainless steel front is gorgeous and shiny and I love it, I would never want a white or black one. Go stainless or go home! That being said, keeping the thing fingerprint free is nigh impossible. When the door is fully open, the only way to close it again without putting your dirty mitts all over the freshly polished stainless steel is to lift it gently with your foot and then close it the rest of the way via the handle. But with two little kids and a husband with a less than keen eye for details, this is very tough.

I have bought special stainless steel polisher, but you really, actually have to polish it! There’s no wipey wipey and there you go, you have to clean it in the direction of the grain and then polish it with a dry cloth and then God forbid anyone touches it, cause then the real redhead in me comes out!

But honestly, that is a small problem when the list of pros is so damn long. I mean, look at it! I think I have an appliance fetish…The rack in the above photo moves up and down to accommodate larger dishes in the top rack, which is super handy for big mixer cups! And there’s all sorts of adjustable tines and wine glass racks and the sliders glide the racks in and out with little to no effort….it’s just plain awesome.

Vanilla Protein Pancakes

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: 10-15 pancakes

Ingredients

  • 2 large eggs
  • 1/4 cup liquid egg whites
  • 3 tbsp almond milk
  • 7 tbsp white rice flour (1/2 cup - 1 tbsp)
  • 7 tbsp vanilla whey protein powder (1/2 cup - 1 tbsp)
  • 1 tsp baking powder
  • pinch of sea salt
  • pinch of vanilla bean powder or 1 tsp vanilla extract
  • Optional: butter for frying

Instructions

  1. Preheat a nonstick griddle or large pan on medium low heat.
  2. Process all on high speed in blender until completely smooth.
  3. Melt butter in pan or on griddle if using and pour batter in desired shapes and sizes. Cook 45 seconds or until bubbles just begin to form, then flip over and cook 30-45 seconds more.
  4. Serve with desired toppings or use as bread for making PB and J sandwiches (as above) for your kids lunch!

Notes

These freeze well too. Just freeze flat on cookie sheets for easy thawing. Pop into toaster and voila!
