These Mango Shrimp Spicy Lettuce Rice Cups were an absolutely perfect little lunchtime meal. Easy to put together, filling and delicious. They take no time at all to make, and even less if you make the rice in advance. Pairing fresh shrimp with juicy mango brings out the sweetness in both and adding a crunchy lettuce leaf gives it a wonderful texture. The rice not only adds substance but an interesting mouthfeel along with the sweet mango and plump shrimp.
These could easily be served as appetizers, snacks or a light lunch. The Thai Kitchen Spicy Thai Mango Sauce is sweet, sticky and just the right amount of spicy. I love this sauce so much, I think it would be equally at home used as a glaze on grilled fruit as it would be as a finishing sauce on many fish or chicken recipes.

Mango Shrimp Spicy Lettuce Rice Cups blend the sweetness of Thai Kitchen's Thai Mango Sauce and fresh mangoes with savoury shrimp and fragrant Jasmine rice.
Ingredients
- 1 cup Thai Kitchen Jasmine Rice (dry measure)
- 2 cups water
- 1 tsp coconut oil
- 1/2 tsp fine sea salt
- 200g shrimp, cooked and peeled
- 1/4 cup Thai Kitchen Spicy Thai Mango Sauce
- 1 large mango, cubed
- Zest and juice of 1/2 a lime
- Club House ground pepper, to taste
- 8 lettuce leaves (butter, iceberg, red leaf, etc.)
Instructions
- In a small saucepan, place the rice, water, coconut oil and salt. Bring to a boil, cover, then lower to a simmer for 15 minutes. Remove from heat and allow to sit, covered, for 5-10 minutes.
- Place the shrimp, mango sauce, mangoes, lime juice and zest and pepper in a bowl and stir to combine.
- To make the cups, place lettuce leave in small bowls or on side plates. Top with about 2-3 tbsp of the cooked rice and 3 tbsp of the shrimp and mango combination. Serve immediately.
