Curried Plantain Patties

It occurs to me that my last post (Apple Pie Pancakes) and this one, look awfully similar. Flat, round discs of deliciousness…what can I say? You get creative when you don’t eat grains, dairy, legumes, corn, soy, sugar or vegetable oils…and by creative I mean, I really know how to mash things up, mix them with eggs and fry them. You can really make a whole lot of good things in this way, mostly pancakes….or “patties”.

When the youngest monkey was a wee one, we used to mix up whatever I could think of and make patties…eventually he asked for “no more patties!” so I guess I really do make them a lot.

Here’s a pic of them this week being silly while I worked on the final touches of my manuscript for Cooking with Coconut Oil. It’s been a long and hard road but with few bumps and I’m pretty proud of the finished product. I’m pretty stoked to tell people I am an actual REAL author. When I tell people I wrote a book they inevitably ask me: “Oh, where can I buy it?” Like, maybe I printed my own cookbook and bound it in my dining room…? I’m only slightly offended at that question. You can buy it anywhere books are sold! Yeah! A REAL BOOK! Not to say self-publishing is a bad thing, but even self-published authors usually sell their books in the big stores if they can.

So for July (I know, I’m a tad late) I was given the Arm & Hammer Simply Saline Nasal Relief Spray. This stuff scares the crap out of me. Mostly because I’ve half drowned a dozen times over my life and the thought of spraying water up my nose is not something I want to share with the world. BUT, I will do it for you guys!

Unfortunately (fortunately) at the time of the review I was sans allergies (thank you PALEO!) and sans colds (thank you coconut oil!) but I sprayed it up my nose anyway…..a few times over the day. Now I can say that it wasn’t that bad, in all honesty. My nasal passages did feel slightly more moist and breathing deeply felt pretty good!

I have tried neti pots before and they are pretty weird. Trying to pour a tiny pot through one nostril while plugging the others while also trying to avoid your kids seeing you doing this? Impossible. Spraying with a convenient little canister? Awesome.

Now that I am allergy free though, the only use I could conceive for future use for me would be when travelling. Air travel to warmer, drier climates always throws me off. When I went to Las Vegas for my honeymoon, I just about went crazy trying to keep my nose from drying out..and my lips…and my skin. I don’t know how people do it there…these coastal climates keep me so supple. Ha!

Now these Curried Plantain Patties, while they aren’t dry at all…

Curried Plantain Patties

Total Time: 3 hours, 25 minutes

Yield: 8 patties

Curried Plantain Patties

Slightly sweet, slightly spicy and perfectly simple. Cute little sunshine yellow curried plantain patties. Great paired with chicken lamp or pork.

Ingredients

  • 2 medium plantains (brown to some black)
  • 4 tbsp coconut oil, divided
  • 1/4 cup coconut milk
  • 2 eggs
  • 1 tbsp coconut flour
  • 1/4 tsp each ground cinnamon, nutmeg, cumin, cayenne (optional)
  • 2 tsp curry powder (any kind)
  • 1/2 tsp sea salt

Instructions

  1. Peel plantains by first cutting off the top and bottom, then slicing lengthwise in half and removing peel.
  2. Heat 2 tbsp coconut oil in a cast iron pan on medium heat. Place the plantain halves (or quarters if space is limited) in the hot oil. Fry the plantains until golden, flipping as often as needed to avoid burning. Remove from heat and cool to room temperature.
  3. Puree the plantains in a food processor with the remaining ingredients. Refrigerate the dough for 2-3 hours (this provides a firmer texture for forming patties).
  4. In a cast iron pan, heat remaining 2 tbsp of coconut oil on medium heat. Scoop out dough and form balls in your hand, then flatten into patties, place in oil and fry 2-3 minutes per side or until golden. Continue until all dough is used.
  5. Serve with sour cream, if you're into that kind of thing....or mango chutney for a real treat.

Notes

Make the dough ahead of time to ensure a good texture for forming patties. You can fry the plantains, make the puree and make the patties all in one shot, but the patties may fall apart in the pan.
