Apple Pie Pancakes

Today I whipped up some pancakes. Just off the top of my head this morning, I thought….”Wow, we have a lot of apples sitting on the counter.” The apples were a gift from our friends and neighbours, who have a large transparent apple tree in their yard. It’s our own little U-Pick! I don’t like them that much, personally…they are a bit tart for eating out of hand. But Adrian and the kids LOVE them for some strange reason.

In any case, we picked a bunch last week, made some pie (recipe is being tweaked..but it’s coming atcha soon!) and then forgot about the bag. So this morning I figured, I MUST be able to turn them into dessert for breakfast type treats for the kids. They’ve been eating bacon and eggs every morning for weeks…which they love, but you know, bacon. It’s not the best food in the world.

On a side note, the kids have been pretty much 90% paleo for a few months now and seem to be loving it, thriving in it and blowing their (my) health and fitness goals out of the water! They are in gymnastics as well as tooling around every day in the garage box while we WOD. They love hanging like monkeys off the pull up bars mostly, but they also love wheelbarrows, leap frog, pulling the sled around and especially farmer’s carries. Who knew kids could dig fitness so much? All I try to keep in mind is that it has to be fun and they will healthy, well rounded kids. My personal goal is for them to never even have to think about their health or their weight (like I did).

Oh yeah and this happened:

Five and a half years old and his teeth are falling out already! The tooth fairy was so proud she brought him a PlayMobil recycling truck and a five dollar bill. Holla! Best Tooth Fairy ever! Look at that face, don’t you just want to smush his little cheeks together? I can’t believe how big he is getting! Kindergarten starts in a month! Whoa…

Back to the pancakes. Verdict?  Delicious, tender, fluffy, apple pie like flavour. The kids loved ’em and they would only give me the crumbs off their plate when I asked to have a bite. Apple Pie Pancakes has got to be one of the best paleo pancake recipes I’ve made so far, but the future holds more for sure. Paleo baking and breakfasts have become some of my favourite things to make.

Apple Pie Pancakes

Cook Time: 6 minutes

Total Time: 11 minutes

Yield: 6 medium pancakes

Apple Pie Pancakes

Ingredients

  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp ground cinnamon
  • pinch of fine sea salt
  • 4 eggs, beaten
  • 3/4 cup grated apple (about 2 small or 1 large)
  • 1 tsp pure vanilla extract
  • 1/2 tsp raw apple cider vinegar

Instructions

  1. In a small bowl, whisk dry ingredients together.
  2. In a separate bowl, beat the eggs very well. Stir in the apple, vanilla and apple cider vinegar.
  3. Heat a lightly oiled (coconut oil), heavy sauté pan or a large non-stick pan on medium heat. Spoon into pan in desired sizes (I made 6 medium sized pancakes with this recipe) and cook until small bubbles form on the top (about 3-4 minutes depending on size). Flip and cook an additional 2-3 minutes.
  4. Serve plain, with fruit sauce or a good dollop of pure maple syrup.

Notes

These freeze and refrigerate quite well. Cool on wire racks and then transfer to an airtight container. Place in fridge or freezer. To reheat, simply warm up in pan on medium heat (once defrosted) or pop in the toaster.
