This has become my regular Sunday dinner dish because it feels so special, and yet takes so little effort. I change up the flavourings to make this more of a Portuguese chicken (with paprika, garlic, and wine among other things - based on a recipe I saw in Chatelaine), but I use your cooking method and it's perfect and delicious each and every time. I use a BC certified organic chicken for this dish and it's always amazing.

To make sure you are buying local, fresh chicken, always read the label. It should say where it is raised and possibly even have the name of the farm on the label. If there is no forthcoming information discernible on the label, ask the butcher or meat department of your grocer. They should know where all the meat is coming from. The best solution is to buy from local small butcher shops if you have them. They almost always source local and direct from the farmer, giving you the freshest possible bird to choose from.

I'll try this. When I buy chicken, how can I be assured that it's a Canadian chicken?

Just came over from Jenn's blog. This recipe just coming handy. Somebody just gave us a chicken, which is a bit of a treat for us, as I can't normally afford meat. Will try an approximation of your recipe (it's boring following it to the letter isn't it, and can't get sweet potatoes in Italy)

No matter how many recipes I've read on how to roast a chicken, I always like to find new ones. And your with the roasted root vegetables looks really yummy. For some reason I never remember to put carrots in my vegetable medley, which is crazy because they are delicious when they are roasted!
